Caramelized Peaches with Pistachios, Goat Cheese and Prosciutto
5 peaches, halved
5 tbsp soft goat cheese
2.5 tbsp chopped pistachios
10 slices of prosciutto
2 tbsp chopped mint
1 tbsp honey
2 tbsp olive oil
1. Preheat oven to 425.
2. Drizzle peach halves with olive oil and roast for 20 min.
3. In small bowl, mix goat cheese and chopped mint.
4. Remove golden brown peaches from the oven and top with a dollop of herbed goat cheese.
5. Sprinkle on pistachios, and lay a slice of prosciutto on top. Drizzle with honey. Serve warm.
