What to Wear, What to Serve
Begin the weekend with a quick and simple recipe! This What to Wear, What to Serve will have you center stage for your Friday night house warming. Not only is this recipe healthy and delicious, you’ll be serving in style with subtle pops of color and eccentric accessories. To start the two-day-break off right, we’ve partnered with founder of PREP Personal Chef Service, Betsey Potter who shared her zestful and authentic Roasted Red Pepper and Garlic Hummus recipe straight from her kitchen:
Roasted Red Pepper and Garlic Hummus
16 oz cooked chick peas
2-3 roasted red peppers
4 garlic cloves
1 1/2 tsp ground cumin
1 tsp chipotle chili powder
1 tbsp chopped dill
Juice from half a lemon and it’s zest
Salt and Pepper
1 tbsp olive oil
Puree all ingredients (reserve the dill) and slowly add olive oil.
More or less to the desired consistency.
Mix in chopped dill by hand and top with lemon zest to serve.
