What to Wear, What to Serve
This week we have a really summery What to Wear, What to Serve to get you excited for the weekend! I can’t get enough watermelon when its hot out, and this sophisticated unusual pairing of watermelon and feta will impress your guests. Take it to a beach picnic, or just make some to eat over the counter, we won’t tell.
Watermelon Cups with Feta and Mint (Serves 16)
16 – 1-inch cubes of seedless watermelon, chilled
2 oz. crumbled Feta cheese
2 tbsp finely chopped mint
2 tbps finely chopped shallot
pepper to season
Using a small melon-baller, scoop out a little well in each watermelon cube. In a small bowl, mix together the feta, mint and shallots, season with pepper and stuff into the watermelon cubes. Enjoy!
